Mmmm Maple Bacon Jam


Maple Bacon Jam


6 lbs bacon6 large onion sliced thin

20 cloves garlic

1/2 cup brown sugar

2 cups coffee

1 1/2 cups apple cider vinegar

1 cup maple syrup

salt and pepper to taste if needed


cook bacon until crisp and cut into 1 inch pieces, set asidecook onion and garlic in bacon fat until translucent, then drainall but 1/2 to 3/4 cups of the fat and add the other ingredients


Simmer until thickish. Use a blender to dice up if needed.

I canned in 1/2 pint jars at 10 lbs psi for 75 minutes.

  3. The first 2 ingredients run together in the recipe list. Does this call for 6 whole onions? What size?
